Coconut ice cream with mango sticky rice. The blue colored sticky rice comes from a butterfly pea flower that is soaked in water until it imparts a blue color. Then it is strained and the natural blue dye is added to the sticky rice. This delicious coconut ice cream was topped with sponge cake and sweet mangos, served in a hallowed out coconut. We enjoyed this scrumptious dessert while watching the sunset on Ao Nang Beach in Krabi.
